I am always looking for new carnivore(ish) dishes to please my friends at fancy dinner nights and this was a winner! Beth is sort of a picky eater (but getting better!) and meat and cheese substitutes are usually the way to go. This was a good way to disguise vegetables (I added sauteed carrots, mushrooms, and onions and blended it with the tofu) which she doesn’t do in the original recipe, but you cannot even taste them! I didn’t have the Vegg so I just blended the tofu instead of cooking it and I also put hash browns in with the fake sausage before putting the tofu mixture over top.

This quiche was awesome! It is very hard to find a good tofu quiche recipe, let a lone one with any flavor at all! This met all of my needs, super flavorful, pretty, and not very soggy at all! It is perfect for brunch or breakfast or anything you want! :)

These were super good, probably not the best idea before running around on a soccer field…. YOLO. Anyways, Ben requested a gravy next time because the bread was too “breaddy”. Noted. The potatoes are our most recent farmers market purchase, they were too adorable to pass up. The recipe is on the same site under sides. (I couldn’t find it really)

I thought I was busy in the summer, but it’s about to get worse.
NO PROBLEM! Fancy dinner night is still one night a week, so I will at least be posting something delicious and vegan once a week! How neat! I will still be here to answer all of your vegan questions, also, so keep them coming.

Just some quick soup before work!
My boyfriend always makes fun of me because I put peanut butter in basically every quick soup I make in the winter. Well guess what! I didn’t put peanut butter in this one. :)
Just a quick dinner!
Tofu, chickpeas, broccoli, garlic, onion, lime, molasses, ect.
Deelish.
Creamy Italian Mushroom Skillet!
I seriously never post anymore, due to the fact that I work a lot. Next week probably all day and all night so don’t expect a post after Sunday! :)
This is just something I whipped up because I had some mushrooms chilling in the fridge, they just wanted to be in my belly. Who am I to deny some poor little bella mushrooms?
Basically:
1 small potato diced
4 bella mushrooms stems removed cut in half and sliced into thin pieces
about 1/2 cup frozen spinach or 1 cup fresh spinach
1/3 cup chickpeas
1/2 tbsp minced garlic
Various Italian spices (be generous)
1/2 tbsp earth balance
1 tbsp soy yogurt or whatever vegan yogurt you like that isn’t fruity
1/2 cup almond milk (or your preferred)
1 tbsp nutritional yeast
First microwave your potatoes for around three minutes with the garlic, earth balance, and 1 tbsp of almond milk.
When that is done throw everything in a skillet and cook until it looks done.
HAPPY FRIDAY.

This was just basically a salad of things I had in my fridge. This is what most of my salads consist of.
The dressing was really good, it is a strawberry dressing as you might have guessed from the pinkish hue. I usually don’t like thicker dressings, but this one was alright! The sweetness in thicker dressings just throws me off, I’m more of a vinegar and olive oil girl.
Easy Microwave Potatoes
This is my Mom’s recipe… sort of. She makes it for me when she makes it for everyone else, just in a different bowl.
1 serving…
1 potato
1 tablespoon vegan butter of choice
1 tablespoon vegan milk of your choice
I used seasoning salt and garlic powder, but you can use whatever spices/herbs you want! Experiment!
Cut the potato into smallish pieces mix with the butter and milk. (butter doesn’t have to be melted)
Throw in the microwave for three minutes
Add spices
Throw in for three more.
DONE!
Easypeasy.

Probably the best no-egg salad recipe ever. Ever. I could definitely fool pretty much anyone with this sandwich.
Avocado Reuben
I don’t think that I have ever found a cookbook that I could cook so many things out of without going to the store first. It is very rare to find a cookbook that meets my small town needs, and my budget!
This sandwich had all of the comfort of a normal vegan Reuben, without the mass amounts of gluten I usually have to use to make the meat substitute. Usually my stomach would be in knots, but it’s not! I feel great! :)
Refreshing Mint Quinoa Salad
I just needed something light today for lunch/dinner before work and I was feeling the quinoa so this happened.
Leftover Tofetta, chives, green onions, kalamata olives, and some chickpeas deeelish. The mint gives it a clean refreshing aftertaste as well.

Pierogies… didn’t look so great, but tasted amazing!
The salad had a caramelized balsamic dressing that was freaking delicious. I also made tofetta which was actually really good! (vegan feta)

Just a simple salad.
I had this last night for dinner because, well, I love sprouts and I want to eat them on everything and I need to stop eating so many sandwiches!
I sauteed the tempeh, mushrooms, and chickpeas for a few minutes to top it. My dressing was (I think…) a mix of lime juice, tamari, white wine vinegar, garlic, and some red pepper flakes on top!
