BREAKFAST SAVORY WAFFLES!
These are a lot like the savory pancakes that I make a lot for breakfast when regular breakfast food just doesn’t sound good! Sometimes I don’t always crave sweet things!
This basically consists of hummus (or chickpeas with a little bit of tahini and garlic processed) some mashed potatoes (or instant mashed potatoes) and some veggies of your choice (I used mushrooms, peas, and spinach!) you could also use corn, or peppers or maybe even tomatoes (but that might be watery and the consistency wouldn’t be the same!) :) I don’t really have a set recipe, it is different every time!

“Chicken” Fried “Steak” Bites
This recipe is from Vegan Cooking for Carnivores which is definitely one of my go-to recipe books when I am cooking for, well, carnivores. I like to put this recipe over garlicky mashed potatuhs. It is definitely one of Beth’s favorites, so obviously it is a must for fancy dinner night. If you are a vegetarian looking to go vegan or a carnivore looking to go vegan or vegetarian this is a good cookbook, get it. It has a lot of meat substitute recipes which I don’t personally make a lot, but it might be good for someone who misses meat. I just don’t.

I am always looking for new carnivore(ish) dishes to please my friends at fancy dinner nights and this was a winner! Beth is sort of a picky eater (but getting better!) and meat and cheese substitutes are usually the way to go. This was a good way to disguise vegetables (I added sauteed carrots, mushrooms, and onions and blended it with the tofu) which she doesn’t do in the original recipe, but you cannot even taste them! I didn’t have the Vegg so I just blended the tofu instead of cooking it and I also put hash browns in with the fake sausage before putting the tofu mixture over top.

Tofu Spring Quiche

This quiche was awesome! It is very hard to find a good tofu quiche recipe, let a lone one with any flavor at all! This met all of my needs, super flavorful, pretty, and not very soggy at all! It is perfect for brunch or breakfast or anything you want! :)
Broccoli Slaw!!!
This was a hit with the family, everyone enjoys some good slaw every now and again.
2 bags of broccoslaw
1 small bag of purple cabbage
1 small bag of granola (whatever flavor you want or plain)
1 package of dried cranberries
Dressing:
1/2 cup olive oil
3 tbspn agave
1/2 cup apple cider vinegar
2 tbspn soy sauce
(If there isn’t enough, just add more of each ingredient)
MIX!
You are a joke, I just saw your cover girl ad and it is definitely relevant to hear about how edgy you feel at all times… K. Also since you are promoting covergirl you are promoting animal testing as well, so that’s good. Congrats.

Just another dessert hummus recipe thanks to the lovely Alison at Culinary Adventures In the Kitchen. I made a tweak to the recipe and added coconut, and I didn’t have coconut oil so I didn’t put any oil in at all. :) This would have been amazing with peanut butter, if I had any.

Savory Potato Veggie Pancakes
This is what happens when I start running out of food, weird combos. I guess it isn’t that weird, now that I think about it. I was just really hungry this morning and needed something other than nothing so I had to improvise!
All you need is some pancake mix, and some veggies. It doesn’t really matter what kind but you have to use common sense, obviously.
I used potatoes, spinach, and peas. Microwave them until soft and mash a bit, then mix with about a cup of pancake batter, then bake as usual.
You can also use whatever spices you want. I used a little tamari before microwaving the vegetables for some flavor. Then I sprinkled some cumin, chili powder, old bay seasoning, and dill over the mixture. These were way better than I thought they were going to be! :)

Cheezy Brussels Soba
The “cheezy part” was great thanks to Julie Hasson’s (Author of vegan diner) awesome Great Smoky Mountain Cheeze recipe!
I just love Brussels sprouts there is just something about them that is awesome. Combine that with cheezy sauce and my favorite kind of noodle, and you have my new favorite meal!
I might recreate it soon so I can actually record what I am doing while I am doing it and post a recipe. Maybe.

This is so good!!! I even got a “super good” out of Ben. Who knew that chickpeas could be so versatile?
I didn’t have any oats besides a package of instant, and that worked fine just in case you run into the same problem!
I can totally relate to the chocolate cravings described in Alison’s recipe. It is a daily struggle not to stuff my face with everything I can find especially when I have been working out a lot. Things like this make it at least a little better… with some added fiber and nutrients.
